Beignets At Home

We love beignets…they are the treat of all treats at our house.  A breakfast that will get you up and out of bed.

My family has never been to New Orleans, but we have the pleasure to experience a little sliver of this great city once in a while when we make beignets.

Beignets are fried puffy donuts, that are sprinkled with powdered sugar. You will instantly find yourself addicted to them and you quickly loose count how many you have eaten; and if you do realize how many you have eaten, you feel no remorse.  They are that good!

Cafe Du Monde has beignet mix for sale on their website. We purchase our beignet mix from Cost Plus-World Market, where they also sell the coffee from Cafe Du Monde. We buy two boxes and store them in the freezer, where they will keep indefinitely.

Ingredients

Instructions
  1. MIX-in bowl 2 cups mix & 7 fl. oz. water. Stir with spoon until blended.
  2. ROLL-to 1/8" thickness on floured surface, using flour liberally on dough. Cut into 2 1/4" squares. Makes about 2 dozen.
  3. FRY-in an inch or two of oil @370℉, each side should be puffy and lightly golden in color, this takes about 30 seconds for each side. Use candy thermometer to give an accurate temperature. Donuts will be floating on top of the oil. Drain donuts on cooling rack.
  4. ENJOY-while donuts are hot, sprinkle liberally with powdered sugar. You can also sprinkle with cinnamon-sugar or drizzle with honey.
