A Goofy Looking Pancake!!

Yes, that is a pancake and yep, it is goofy looking.  But this is one of my family’s favorite breakfasts.  This is actually called a Puffed Oven Pancake and this recipe is from my Better Homes & Gardens “New Cook Book”, 10th edition, ©1989.  This was one of my first cookbooks and it has been a good friend in my kitchen.  I don’t know if this recipe is in newer editions, though.

Ingredients

Instructions
  1. Heat oven to 400℉.
  2. Place butter in a 10-inch ovenproof skillet or corning ware dish. Place in oven for 3-5 minutes or till butter melts.
  3. While butter is melting in oven; in a bowl beat eggs with a rotary beater till combined. Add the flour, milk and salt, beat till smooth. Immediately pour into the hot skillet.
  4. Bake about 20-25 minutes or till puffed and well browned.

The picture above is what it looks like when done in my oven after baking for 20 minutes.  As the pancake cools, it will start to deflate.  Don't worry, all is well.

We serve ours with fruit, usually frozen blueberries that I heat up in a covered pan on medium-low with some added sugar while the pancake is baking and then I sprinkle some powdered sugar on top to give it a fancy look!  This serving amount feeds my husband and I perfectly and our bellies are full. 😉  When my son is home, I double the recipe and there are never any leftovers.

You can omit the fruit and serve it with some maple syrup.  You can also make some eggs and bacon or sausage while the pancake is baking to have a full breakfast/brunch meal.  This is also a perfect breakfast to whip up when you have guests over.  Give it a try and serve up a goofy looking pancake!!
